How easy it can be to make a full meal in the oven!
For this one you need a pumpkin, dukkah spice, canned beans and some grains (cooked rice or millet for example). The idea is to bake your veggies and add your leftovers onto the baking tray to warm them up at the end of the baking time. Then upgrade your meal with fresh herbs and a dressing if you don't like it too dry.
1. Cut a hokkaido pumpkin, massage with some coconut oil, and bake at 180°C
2. When baked, add a can of rinsed white beans
3. Sprinkle a nice amount of dukkah spice on top (I made mine at home)
4. Bake for 5 more minutes
5. Add some leftover rice (I had nice jasberry coconut rice)
6. Serve and ornate with parsley and some creamy stuff - coconut yoghurt, cashew crème fraîche, a fluid hazelnut dressing...
